Find a New Recipe a Month Club

Hopefully everyone will join me in this and lets bake together, although apart.



Hopefully I will add to this.
I found a recipe in my ThyCa cookbook that is so good.
Cookieeeeeeeeeeeeessssssssssssssssss!!!!
Make these at night!!!!

It is called the
Forgotten Cookie.

Preheat oven to 350.
Beat two egg whites with a pinch of salt (I had to use plain)  until stiff.
Slowly add 1/2 cup of sugar and I tsp vanilla,
 (For a variety of flavors try orange, coconut, Maple, Lemon, whatever you like)
Beat until stiff peaks form.
 (I use my wire whip on my Kitchen aid)
Fold in 1/2 cup  or more cut of chopped nuts.
 Drop by TEASPOONS onto parchment lined cookie sheet.
TURN OVEN OFF!!!!
Place cookies in oven and forget about it.
Leave overnight.
Tomorrow morning you have a great snack or cookie ..
I thought about adding coconut but it has salt in it. So I  will stick with un salted nuts.
I am sure I will vary the flavors of these cookies over the next two weeks.

These will be a nice addition all year to my quick baking.

Those sound like resurrection cookies...you make them Easter eve...they should be hollow in the morning, like the empty tomb.
