The Lowly Potato

What could be lower? It grows underground, around any obstacle that may get in its way.
It grows and produces one of our finer foods. One that is used by rich, poor, beggar, kitchens all over the world.
The lowly potato.
That potato has been my mainstay this week. I bought the Yukon golds, boil until firm done and set aside.
When I am ready to eat, I slice them in half and turn them cut side down in a skillet with spices and flavor. (no salt). I brown it nicely then devour.
That has keep me going. It stays in my stomach and fills me up.
This week has been hard to find food that sticks with me and I have yet to lose the potato.
I grew up eating potatoes, Baked, fried, boiled with jackets on, boiled in chunks before adding butter and lots of pepper, Mashed, Creamy, Used as a topping in Shepherds pie. Potato chips, You name it I bet it can be used by potatoes.
Potatoes the versatile food.
It can become a main course. Bake it, load it with chopped beef, top with cheese, mushrooms, butter and chives and of course gravy, butter or sour cream..
Very good food.
As I sat last evening eating my potato, I thought of how this little veggie was formed under ground. You can often see the rock marks left by stones on their side. The don't care, they just grow anyway and produce massive worlds of art.
Potatoes have lots of eyes so they can see their enemies. You just have to cut out the grit from the eyes.
At a young age I learned how to peel a potato to save every last part that was edible.
I often think how my Mom would love the idea that we now eat the peels.
However this week, I an not allowed to eat any potato peel. I guess it consumes too much iodine.
So this week I say Thank YOu God for the potato. It is good to keep a sick person going.
Hummm
Maybe that is why potato soup is so popular when you are sick.
Maybe I will make some tomorrow.
